The process begins by aging raw honey inside an oak barrel that previously held whiskey. The STR method enhances the honey by exposing it to multiple layers of the barrel's wood treatment:

 

1. **Shaving**: The inner surface of the barrel is shaved to remove the old char, revealing fresh oak. This brings out subtle, underlying wood tannins and enhances the honey's natural floral notes.

  

2. **Toasting**: The barrel is toasted, which caramelizes sugars within the wood. This step imparts deep, warm flavors like caramel, vanilla, and spices to the honey, enriching its sweetness with complex undertones.

 

3. **Recharring**: Finally, the barrel is charred again, creating a layer that brings smoky and bold characteristics. The honey absorbs hints of smoke, dark chocolate, and whiskey, giving it a robust finish.

 

The result is a honey that is rich in complexity, blending sweet, oaky, and smoky notes with a smooth, lingering depth of flavor from the whiskey. Perfect for adding depth to cocktails, drizzling over desserts, or savoring on its own.

  • Warming honey helps with pouring.  You can place bottle in hot water for a few minutes or pop an open bottle in the microwave for 15 seconds.  Repeat a few seconds at a time until honey is fluid enough to pour.
